Quick Sweet Potato

Start your potato in the microwave: Pierce the potato and place in a microwave safe dish, cook until they become soft. Time will depend on the size.

Transfer the potatoes to an oven proof pan lined with parchment or aluminum foil. Place in an 400F oven for 15 to 20 minutes. The potatoes are at their best when they ooze sugar!

Microwave Safety Controversy

Microwave safety is a controversial topic. Even so, you will find that nearly every home is now equipped with one.

It seems the convenience has far overpowered any concerns of what microwaving might do to the nutritional value of food. A sign of the fast paced technical world we live in today. :-)

I have to admit that I use the microwave more than I really should, given that some studies do show that it breaks down the nutritional value of foods.

I also haven't done much research in this area, but found an interesting article on this subject that shed some light on the concerns.

I learned at least a couple of interesting things...

- It does matter what type of dish you use in the microwave, in order to minimize some possible health risks. (a glass dish is preferred)

- The nutritional value of foods are compromised significantly more than other methods of cooking, such as steaming...

In the end, it's a personal decision. However, we should be aware of the concerns in order to make an informed decision.

Microwaves are not healthy

I just wanted to say that whereas sweet potatoes are a great healthy food, microwaves destroy the life energy of any food so you would be so much healthier to just bake them. Will take a tad longer but the food will retain its integrity.
