Apples and Sweet Potatoes

Smushed Apples and Sweet Potato Recipe

It tastes a lot like apple pie but healthier!"
Ingredients:
- l/2 teaspoon ground allspice
- 1 Granny Smith apple, peeled, cored, and sliced
- 2 Tablespoons milk
- 2 large sweet potatoes, peeled and diced
- 2 Tablespoons butter
- 1/4 cup white sugar
- 1 teaspoon ground cinnamon
Preparation:
- Place the sweet potatoes in a medium saucepan with water to cover; bring to a boil.
- Reduce heat to medium and simmer for about 20 minutes or until tender. Remove from heat.
- Drain and set aside.
- Melt butter over low heat in a small saucepan.
- Mix in the sugar, cinnamon, and allspice. Add the apple slices and let
simmer, covered, for 5 minutes or until the apples are tender.
- Add apple mixture and milk to the drained sweet potatoes. - Beat with an electric mixer until potatoes are mashed.
Yield: 6 servings.
Note: As a variation, you can mix in cloves or nutmeg. This is also delicious topped with brown sugar and pecans.
Apples and Sweet Potatoes
- 6 medium size sweet potatoes
- 1/2 cup brown sugar or 1/4 cup maple syrup
- 1 1/2 cups of sliced apples, unpeeled
- 1/2 teaspoon salt
- 1 teaspoon of mace, optional
- Apple juice or cider
How to prepare:
- Boil sweet potatoes until tender.
- Slice in 1/2 inch pieces.
- Butter a baking dish and put a layer of sweet potatoes in bottom, then a layer of apples and repeat the layering. The very top layer should be of apples.
- Sprinkle with sugar or syrup and salt.
- Bake in oven at 350 degrees Fahrenheit, for about 30 minutes.
